Pacific Estates Cabernet Sauvignon Single Vineyard
Winemaker Notes: This vintage was exceptional for Bordeaux varietals in Paso Robles. Cooler than normal temperatures in the spring and summer, followed by a dry and unusually warm fall allowed for a long ripening season, resulting in ripe, fruity aromas and intense flavors. Healthy bunches with small berries were night-harvested to achieve the best balance of sugar and acid. The freshly crushed grapes were fermented at moderately warm temperatures, and the cap was sprinkled to gently extract favorable tannins and color components. During the sixteen months of barrel age, the slow exchange of water and oxygen through the pores of the staves served to concentrate the flavor and body while enhancing the bouquet and structuring the finish.
Tasting Notes: Regal aromas of cherry, berry and cassis, and classical varietal notes of cedar and tobacco leaf are augmented by black pepper and mint. Full-bodied with superb structure, it has intense fruit and cocoa flavors, and a lingering, silky finish.
Serving Suggestions: Serve with a prime cut of beef, or spicy Asian cuisine. Will improve with proper cellar aging for four years, and will remain lovely for another ten years.
