Pacific Estates Cabernet Sauvignon Vineyard Cuvee

Winemaker notes:

2005 was an excellent for Bourdouex varietals in Paso Robles. Moderate temperatures in Spring and Summer, followed by a dry fall allowed for a long ripening season, resulting in ripe, fruity aromas and intense flavors. Healthy bunches of small berries were night-harvested to achieve the best balance of sugar and acid. The freshly crushed grapes were fermented at moderately warm temperatures, and the cap was sprinkled to gently extract favorable tannins and color compontents. During the six months of barrel age, the slow exchange of water and oxygen through the pores of the staves served to concentrate the flavor and body while enhancing the bouquet and structuring the finish.

Tasting notes:

Regal aromas of plum and cassis along with classical varietal notes of cedar and tobacco are augmented by black pepper and mint. full-bodied with a fresh approach it has intense fruit and cocoa flavors, and a lingering, smokey finish.

Serving suggestions :

Serve with a prime cut of beef or spicey asian cuisine. Will improve with proper cellar aging for four years and will remain lovely for another ten.
